As is tradition in the Old Country and along the shores of the Mediterranean, an octopus is never cooked without the company of a wine cork.
What started as an ever-abiding law in Mediterranean kitchens and has been somewhat debunked by modern science, it is a tradition that continues to be embraced by Italian cooks and us here at Ma(i)son. It is one of those Old Country culinary traditions that we love embracing and believe, as most Italians do, that the cork indeed has a magical effect at tenderizing the octopus.
